What are the Orange electrical connections under the hood for? I have one on driverside fender and one on passenger side by heater box. What are these for can they be deleted?

The one on the driver side is a diagnostic plug. You can remove it. Although it has a hot ignition wire you can use for remote start when you are working under the hood. It is the purple wire. I'm not sure the connector on the other side. Do you have a pic?

Those orange test connectors are just that - terminals for testing various circuits.   This was the days before OBD 1 and OBD 2.   You will find the wires in the connectors just make accessing certain circuits easier.   The shop manual has information on this.
